We usually recommend completing the last pre-midnight pass with enough time for the room to reset. Service can then resume after the toast with one focused item or a short sequence. For parties extending well beyond midnight, the final food wave should be easy to eat and sufficiently savoury. Its purpose is not to recreate dinner. It gives guests a considered last bite after several hours of cocktails and helps the party finish with the same level of care as it began.
Hosts should also confirm practical timing early. Condominium function rooms in Ortigas, Quezon City and BGC may have strict supplier access, lift reservations and closing procedures. Some subdivisions in Alabang and San Juan require vehicle accreditation. These rules affect kitchen setup, clearing and staff departure after midnight.
December evenings are cooler than much of the year, but Manila remains warm and humid. Air-conditioning may weaken once doors open repeatedly or guests move between indoor and outdoor areas. Chilled seafood, dairy garnishes and caviar therefore need controlled holding rather than prolonged display.
