Halal catering Metro Manila requires more than removing pork from a menu. We document ingredients, kitchen handling, serviceware, allergies, and the level of halal assurance required before confirming what we can safely provide.
This process works for private and corporate events across Makati, BGC/Taguig, Ortigas/Pasig, Quezon City, Alabang, San Juan, and Manila. It also accounts for Metro Manila traffic, tropical heat, and humidity when planning preparation, transport, and service.
“Halal” can mean different things to different hosts and guests. Some require halal-certified meat. Others need an entirely pork-free and alcohol-free menu, dedicated utensils, or food prepared in a halal-certified kitchen. These requirements are not interchangeable.
Our first step is to establish the exact standard expected for the event. We ask whether certification must cover individual ingredients, the kitchen, the caterer, or all three. If Spoon & Caviar cannot meet the requested certification or separation standard, we say so before menu development rather than making an unsupported halal claim.

Dietary handling starts with a dish-by-dish ingredient review. Sauces, stocks, pastry, cheese, confectionery, and garnishes may contain less obvious ingredients such as cooking wine, gelatin, animal-derived enzymes, or pork-based flavouring. We do not rely on a dish name or visual appearance to determine suitability.
For halal-sensitive menus, meat and poultry must be reviewed at supplier level. Seafood, vegetables, grains, and fruit can make menu planning more straightforward, but marinades, condiments, and processed components still need verification. Alcohol is not added and then assumed to have “cooked off” when a client has requested an alcohol-free menu.
The approved menu records each dietary designation and any important limitation. If a product label or supplier changes before the event, the affected item is reassessed. A substitution is not made silently.
Allergies are handled separately from preferences and religious restrictions. A guest with a severe shellfish, nut, dairy, egg, or gluten allergy faces a different risk from a guest who prefers not to eat that ingredient. We ask hosts to identify the allergen, expected severity, and whether trace exposure or shared equipment is acceptable.

No responsible caterer should promise an allergen-free environment without understanding the full production setting. Our kitchen and event plan may reduce cross-contact, but guests with anaphylaxis should be told clearly if an ingredient is handled in the same facility. Where the risk cannot be managed to the required level, we will decline that dish or recommend a sealed meal from a specialist provider.
Caviar can be considered for some halal-sensitive events, but its acceptability should be confirmed by the client or their religious adviser. Spoon & Caviar serves sustainably farmed sturgeon roe, with the grade from baerii to oscietra confirmed before the event. Accompaniments also require review: blini contain gluten, while crème fraîche contains dairy.
Caviar in Motion is our chef-led tableside caviar service with blini and crème fraîche. It is quoted per event based on caviar grade and guest count. When appropriate, alternative accompaniments can be discussed, but they must be approved as part of the same dietary plan rather than treated as an informal on-site swap.
For canapé service, a mixed menu may use naturally suitable combinations instead of imitating restricted dishes. Vegetable, fruit, and selected seafood canapés can be designed around the event’s agreed requirements. The Canape Edit starts from PHP 850 per head. The Cocktail Experience starts from PHP 1,100 per head. Final pricing depends on menu composition, staffing, venue access, and dietary controls.
Good preparation can fail if trays are mixed during service. We brief the service team on each designation, use consistent labels, and avoid presenting restricted and unrestricted items in a way that encourages guests to exchange utensils. For passed canapés, staff need short, accurate descriptions rather than guessing when asked about ingredients.
Venue conditions shape the plan. A BGC office tower may require loading-bay registration and timed elevator access. A Makati residence may have limited preparation space. Events in Quezon City, Ortigas, San Juan, Alabang, or Manila can involve long travel windows even within Metro Manila. Cold items must remain controlled through delays, while exposed food needs protection from heat and humidity.
We also serve Tagaytay, Batangas, Rizal, and Pampanga/Clark with a travel and cold-chain fee. For these locations, dispatch timing, insulated transport, refrigeration access, and final assembly are confirmed before the menu is locked.
A clear dietary brief prevents late changes and vague assurances. Send the event date, venue, guest count, service time, and every known dietary requirement. If halal certification is mandatory, include the precise certification scope expected and any documentation your venue or organisation needs.
Please also identify severe allergies by guest where possible. Dietary information is most useful when it states whether shared equipment and trace exposure are acceptable, not simply “gluten-free” or “no nuts.”

The client approves the dietary standard and menu in writing, and any later supplier substitution is reassessed rather than made without notice.
Spoon & Caviar can use separate storage, preparation times, utensils, trays, labelled portions, and service zones to reduce cross-contact. However, we do not promise an allergen-free environment without assessing the kitchen and service setting, and we disclose when an allergen is handled in the same facility.
