Cold food still needs protection from drying. Cured fish, sliced seafood and exposed crème fraîche can lose their finish when left in moving air. Covered staging, last-minute assembly and frequent tray changes are more effective than relying on decorative ice alone.
Weighted menu cards, low-profile risers and stable trays are useful. Lightweight napkins, paper picks and unsecured acrylic signs are not. For standing receptions, attendants should circulate through sheltered paths and avoid holding full trays at the most exposed edge of the roof.
Caviar is sustainably farmed sturgeon roe and must remain properly chilled. The grade, from baerii to oscietra, is confirmed with the client before the event. Selection depends on the desired flavour profile, service style, guest count and budget.
