Venue type matters. A private estate may have limited refrigeration or a distant kitchen. A hotel may require supplier passes, loading schedules and security clearance. A ridge-side restaurant can have stairs, narrow service corridors or restricted staging space. We confirm these details before finalising dispatch and setup times.
Weather can shift quickly. Rain may slow unloading, while wind can affect lightweight service pieces and blini presentation. For outdoor receptions, we identify a shaded, protected staging point and keep reserve caviar chilled rather than displaying the full allocation at once.
This is why we do not rely on the venue climate alone. The service format, storage and replenishment plan must work even when the reception area is humid, the kitchen is busy or the wedding programme runs late.
The logistics sequence begins before the service team leaves Metro Manila. We confirm the final guest count, service start, venue contact, loading instructions and access to a clean staging area. We also verify whether the venue can provide suitable refrigeration, but our core transport plan does not depend on unconfirmed facilities.
Dispatch timing includes a traffic buffer. Routes from Makati, BGC/Taguig, Ortigas/Pasig, Quezon City, Alabang, San Juan or Manila can vary significantly, especially on Friday afternoons and weekends. Alabang is geographically closer, but congestion near toll exits and the ascent to Tagaytay can still affect arrival.
On site, the team checks the staging area before opening the transport containers. Caviar remains chilled while blini, crème fraîche, service pieces and garnishes are organised. Only the quantity required for the immediate service window is brought forward.
The event schedule also shapes the setup. If caviar is served after the ceremony, during cocktails or as a late-reception feature, each timing calls for a different holding plan. We coordinate with the planner or banquet team so the service does not sit ready while portraits, speeches or weather delays extend the programme.
Caviar in Motion is our chef-led tableside caviar service with blini and crème fraîche. It is quoted per event based on the confirmed caviar grade and guest count. The service works well during cocktails, between ceremony and reception, or as a focused moment later in the evening.
We use sustainably farmed sturgeon roe. The grade, from baerii to oscietra, is confirmed with the client before the event. This allows the allocation, service pace and cold-chain plan to match the chosen caviar rather than treating every tin or guest list as identical.

This approach is especially useful at sprawling Tagaytay estates where guests may be distributed across a lawn, terrace and reception hall.
Caviar in Motion does not have a fixed per-head rate. The quotation reflects the caviar grade, guest count, serving format, venue location, travel timing and required cold-chain support. For context, our separate menus start at PHP 850 per head for The Canape Edit and PHP 1,100 per head for The Cocktail Experience, should the wedding require a broader canapé or cocktail programme.

Before the event, we coordinate practical points with the planner, caterer or venue team.
